Home-made Tacos with Nergi Kiwi Berries

  • 180 g wheat flour
  • 205 g buckwheat is flour (or 205 g wheat flour)
  • 110 g water
  • 15 g olive oil
  • Salt
  • Filling:
  • 1 punnet Nergi Kiwi Berries
  • 1 avocado
  • 1 small red onion
  • 16 dried-tomato halves
  1. Fajitas: mix the dry ingredients. Add the oil and water and knead well. Leave to rest for 15 minutes.
  2. Flour the work surface and cut the dough into four pieces. Shape the fajitas, not too thin, with a rolling pin.
  3. Cook them for a few minutes on each side in a hot pan (be careful not to overcook them or they become brittle).
  4. Filling: prepare the sauce: mix the yoghurt, lemon, chopped chives and a little salt.
  5. Cut the onion into thin slices. Peel and cut the avocados into thin slices. Cut the Kiwi Berries in half.
  6. Make the tacos: cover the fajitas with the sauce. Add the onion, avocado, Nergi Kiwi Berries and dried tomatoes. Fold the tacos in half and enjoy. © Vanessa Pollet
