Spring rolls with Nergi® kiwi berries

  • 1 punnet Nergi® Kiwi Berries
  • 4 sheets rice paper
  • 2 carrots
  • 150 g red cabbage
  • ½ mango
  1. Coarsely grate the vegetables, cut the mango and the Nergi® Kiwi Berries in half.
  2. Place a plate filled with cold water next to a damp cloth.
  3. Soak a sheet of the rice paper in the water for 10 to 15 seconds, then spread it on the wet cloth.
  4. Place the Nergi® cut side down in the centre of the sheet, cover with the mango, carrots and red cabbage.
  5. Roll up tightly, taking the sheets’ elasticity into account, and fold over the sides.
  6. Repeat for the other rolls. © Charline Wirth
