Roasted salmon with Nergi® Kiwi Berries and pepper salsa

  • 1 centre-cut section of fresh salmon fillet
  • 1 red pepper
  • 1 yellow pepper
  • 1/2 red onion
  • 2 Nergi® Kiwi Berries
  • 1/2 lime
  • 2 tbsp. olive oil + for cooking
  • 1/4 teaspoon fine salt
  • Pepper
  • A pinch of multi-seed mix
  • A few coriander leaves
  1. Preheat the oven to 190°C.
  2. Place the salmon in a dish lined with parchment paper and drizzle with a little olive oil. Bake for 10 to 12 minutes, placing a ramekin of hot water next to the dish to create moisture during cooking and stop the salmon becoming dry.
  3. During this time, finely dice the peppers and onion. Place in a bowl with the coriander leaves and sprinkle with olive oil, salt and half a squeezed lime. Slice the Kiwi Berries and add them to the bowl, mixing gently.
  4. Pour over the warm salmon, sprinkle with the seeds and freshly ground pepper. Serve immediately with lime wedges and basmati rice. ©Megalowfood
