Halloween pancakes with Nergi® kiwi berries

  • 1 punnet Nergi® Kiwi Berries
  • 300 g pumpkin flesh
  • 150 g whole-wheat flour
  • 1 sachet vanilla sugar
  • 200 ml rice milk
  • 2 eggs
  • 1 tbsp olive oil
  • 1 tbsp baking powder
  • Cinnamon
  • For decoration: Nergi®, almonds, raspberry coulis, pine nuts, chocolate pieces
  1. Cook the pumpkin, blend with the milk to obtain a purée.
  2. In a bowl, mix the purée with the egg yolks, olive oil, vanilla sugar, flour, baking powder and cinnamon.
  3. Whip the egg whites to soft peaks and gently fold into the mixture.
  4. Heat a little oil in a frying pan, cook the pancakes for one minute on each side.
  5. Insert two almonds to imitate horns.
  6. Cut a Nergi® in half for the eyes, use the pine nuts to make teeth, and the raspberry coulis for blood.
  7. Place a piece of chocolate in the centre of the pancake for the nose.
  8. Repeat for the other pancakes. © Charline Wirth
