Ingredients
- 1 tray of Nergi® Kiwi Berries
- 2 chicken escalopes
- Mesclun salad mix
- 2 slices of wholemeal bread
- 4 tbsp pumpkin seeds
- 1 red onion
- 4 tbsp olive oil
- 3 sprigs of parsley
- Juice of one lemon
- Salt and pepper
Recipe
- Sear the chicken cutlets in a pan. Add salt and pepper. Once golden brown, cut them into thin strips. Set aside.
- Cut the bread into cubes and fry them for a few minutes. Set aside.
- Arrange the salad on plates, add the chicken, pumpkin seeds, croutons, chopped red onion, finely chopped parsley and the halved Mini Kiwis.
- Season with olive oil, lemon juice, salt and pepper. Poire & Cactus
