Avocado and Nergi® Kiwi Berry Toast

  • 12 Nergi® kiwi berries
  • 2 avocados
  • 1 tsp olive oil
  • 10 sprigs coriander
  • 1 lime, juice
  • Pinch of smoked paprika
  • Pinch of salt
  • 1 turn of pepper mill
  • 2 eggs
  • 2 slices sourdough bread (preferably)
  1. Peel and pit 1 avocado, then mash in a bowl with 8 kiwi berries, olive oil, lime juice and paprika. Add chopped coriander, season and mix.
  2. Peel and slice 2nd avocado. Cut the remaining kiwis into fourths. Set aside. Poach eggs in pan of simmering salted water 3 - 4 min.
  3. Toast the bread slices.
  4. Top the bread slices with the guacamole, sliced kiwi berries, slices of avocado and poached eggs. © Guillaume Jean Pierre
