Home-made Tacos with Nergi Kiwi Berries

Ingredients
- 180 g wheat flour
- 205 g buckwheat is flour (or 205 g wheat flour)
- 110 g water
- 15 g olive oil
- Salt
- Filling:
- 1 punnet Nergi Kiwi Berries
- 1 avocado
- 1 small red onion
- 16 dried-tomato halves
Recipe
- Fajitas: mix the dry ingredients. Add the oil and water and knead well. Leave to rest for 15 minutes.
- Flour the work surface and cut the dough into four pieces. Shape the fajitas, not too thin, with a rolling pin.
- Cook them for a few minutes on each side in a hot pan (be careful not to overcook them or they become brittle).
- Filling: prepare the sauce: mix the yoghurt, lemon, chopped chives and a little salt.
- Cut the onion into thin slices. Peel and cut the avocados into thin slices. Cut the Kiwi Berries in half.
- Make the tacos: cover the fajitas with the sauce. Add the onion, avocado, Nergi Kiwi Berries and dried tomatoes. Fold the tacos in half and enjoy. © Vanessa Pollet
