Roasted duck breast and NERGI®

Ingredients
  • 2 packs of NERGI®
  • 2 duck breasts
  • 2 tablespoons vinegar
  • 2 tablespoons honey
  • 20 cL veal juice
  • 4 sprigs of thyme
  • 2 tablespoons Armagnac
  • 20 g butter
  • Salt and Pepper
Recipe
  1. Add the vinegar and honey to a saucepan. Boil and leave it to cook until it becomes caramelised. Pour in the Armagnac and the veal juice. Bring to the boil once more. Remove from heat, add seasoning if necessary. Add butter, followed by the NERGI® (cut in half).
  2. Cut the duck breasts. Add salt and pepper and roast the duck breasts in the over. Serve with the sauce, and a sprig of thyme with the duck breast.
