Oat and almond pancakes with Nergi®

  • 1/3 cup oat flour
  • 1/3 cup almond flour
  • 1/3 cup spelt flour
  • 1 tsp baking powder
  • ½ tsp bicarbonate of soda
  • ½ tsp ground vanilla bean
  • Pinch of sea salt
  • 1 cup unsweetened full-fat yogurt
  • 1 tbsp olive oil
  • 1 egg
  • Butter or olive oil for pan frying
  1. Combine all ingredients in a bowl, and stir until well combined.
  2. Heat a small amount of butter or olive oil in a skillet. Scoop about 2 tbsp of the batter for each pancake into the pan and fry on both sides until golden.
  3. Serve with Nergi®, almond butter, chia jam and toasted coconut. ©Sonja Dahlgren
