Nergi Kiwi Berries Waffles

  • 110 g wheat flour
  • 20 g sugar
  • 100 g soy yoghurt
  • 30 g apple purée
  • 3 tbsp plant-based milk
  • 10 g olive oil
  • 1 tsp baking powder
  • Topping: 2 punnets Nergi Kiwi Berry
  • Coconut whipped cream: 1 pack 90% coconut cream + 1 tbsp icing sugar
  1. Waffle batter: mix all the dry ingredients. Add the yoghurt, purée, milk and oil and mix to a smooth paste. Cook the waffles in a waffle iron. Put to one side.
  2. Whipped cream: Place a pack of 90% coconut cream in the fridge overnight, then put a bowl, whisk and the cream in the freezer for 15 minutes.
  3. Whip the cream until it is stiff, you can add a little icing sugar. Pour the cream into a piping bag and decorate the cooled waffles.
  4. Cut the Mini Kiwis in half and place them on the whipped cream. Serve immediately. © Vanessa Pollet
