Nergi® fruit salad with honey/lime dressing and sweet dukkah

  • 1 punnet Nergi kiwi berries, halved
  • 2 apples, cubed
  • 2 pears, cubed
  • 2 figs, wedged
  • 3 passion fruits, halved
  • Honey/Lime dressing: 1 lime, the juice
  • 1 tsp honey
  • 1 tsp fresh mint, finely chopped
  • Sweet Dukkah: ¼ cup hazelnuts
  • ¼ cup almonds
  • ¼ cup pistachios
  • ¼ cup sunflower seeds
  • ¼ cup black sesame seeds
  • 1 tsp cardamom seeds
  • 1 tsp ground vanilla bean
  1. Arrange the fruits in bowls, alternatively everyone picks what they like in their own bowl.
  2. Dress the fruit with honey/lime dressing and top with coconut yogurt and sweet dukkah.
  3. Honey/Lime dressing: Stir lime juice and honey until honey is dissolved, then add mint.
  4. Sweet Dukkah: Preheat oven to 175° C (350° F).
  5. Spread hazelnuts, almonds, pistachios and sunflower seeds on a lined baking sheet and bake for 10 minutes, tossing + adding sesame- and cardamom seeds halfway through. Remove from the oven and set aside to cool.
  6. Add nuts and seeds to the bowl of a food processor and pulse a few times until they resemble coarse breadcrumbs. Add ground vanilla. Store in a sealed glass container in the fridge. ©Sonja Dahlgren
