Dessert To serve Cold
Mini-Pavlova with passion fruit and Nergi® kiwi berries

Budget mini
  • Meringues: 3 egg whites
  • 100 g caster sugar (1/2 cup)
  • 100 g sifted icing sugar
  • 1 tsp lemon juice
  • Pinch salt
  • Whipped cream: 150 ml very cold whipping cream 30% fat (2/3 cup)
  • 100 g icing sugar (3/4 cup)
  • Topping: 1 Nergi® punnet (125 g)
  • 2 passion fruits
  • 1 lime for zesting
  1. Preheat oven to 100°C = 210°F
  2. Beat the egg whites, salt and sugar with an electric mixer, gradually increasing the speed. When the preparation becomes firm, add the lemon and icing sugar, beating continuously.
  3. Put the preparation in a pastry bag and form 10 cm rounds on a silicone mat.
  4. Bake at 100°C for 90 minutes and leave the meringues to cool on a wire rack.
  5. Add the cold single cream and icing sugar to a mixing bowl and whip with a mixer for 10 minutes.
  6. Cut the kiwi berries into thin slices and collect the passion fruit pulp in a bowl.
  7. Top the meringues with whipped cream and add the Nergi® slices.
  8. To finish, cover each meringue with passion fruit.
  9. Add lime zest.
