Halloween panna cotta with Nergi® kiwi berries

  • 50 cl single cream (2 cups)
  • 50 g caster sugar (1/4 cup)
  • 3 gelatine sheets
  • 1 vanilla bean
  • 50 cl coulis (2 cups)
  • 2 Nergi® punnets (250 g)
  1. Soak the gelatine sheets in a bowl of cold water.
  2. Add the single cream, sugar and vanilla to a saucepan and bring to a simmer. When it starts to boil, remove from heat and add the drained gelatine. Whisk thoroughly to dissolve the gelatine.
  3. Pour the preparation into half-sphere silicone moulds and chill for 4 hours.
  4. Slice the kiwi berries and place one on each half-sphere of panna cotta after removing from the moulds.
  5. Pour the red-berry coulis into a dish and serve with a knife dipped in coulis blood!
