Creamy roasted Nergi® kiwi berries salad dressing

  • 1 package Nergi® kiwi berries, divided (125 g)
  • 6 cloves garlic
  • ½ cup canola oil
  • Scant ¼ cup lime juice OR white wine vinegar
  • 1 tbsp mayonnaise
  • 1/8 tsp Dijon mustard
  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Roast 9 whole Nergi® berries and garlic cloves for about 30 minutes.
  3. Meanwhile, chop remaining 6 Nergi® kiwi berries.
  4. When the berries and garlic are roasted, chop them and add to a bowl with the remaining ingredients. Whisk to combine. Store in the refrigerator for up to 3 days.
  5. This dressing is tasty served immediately, but tastes even better after a few hours or the next day.
  6. Yield: Makes about 1 cup.
